FOOD LABO is laboratory for chefs, baristas, patissiers, food and beverage makers, restaurant owners and students who want to become them, etc. from Japan and the United States who, through exchange between the two countries, develop and launch “Brooklyn + Japan” ideas, services, and products that fuse the best of each. A café and a grocery store will also be located in the building, and various events such as workshops will be held.
On the first floor, there is a cafe and food area where you can enjoy a relaxing seating space. The grocery store has a wide selection of Japanese food products and household items.

Empire Arancini
Empire Arancini is Brooklyn’s newest pop-up dedicated to the golden art of arancini—crispy, stuffed rice balls—reimagined with bold global flair. From traditional favorites like our Classic Ragù or Saffron & Bone Marrow alla Milanese, to inventive Japanese-inspired creations like Okonomiyaki Arancino and Miso Shiitake & Scallion, every bite blends comfort with curiosity.
But we don’t stop at rice balls. Our menu features Tramezzini—delicate Italian crustless tea sandwiches with both nostalgic and unexpected fillings, like Prosciutto & Fontina, California Roll–style Crab & Avocado, and Egg Salad with Nori. Rounding it out are handmade Polpette—Italian-style meatballs with a twist—including Tsukune-style Chicken and Eggplant & Miso.

Hakkoan
Hakkoan is a Brooklyn-based fermentation brand dedicated to sharing the beauty and benefits of Japanese koji culture with the local community. Rooted in tradition but driven by creativity, we develop and sell handcrafted seasonings made with麹( koji) and host fermentation workshops that bring the magic of 発酵( fermentationto) life.
This summer, we’re popping up with our amazake stand—a refreshing way to introduce people to the gentle power and rich flavor of Japan’s beloved fermented rice drink.
Dainobu
From Japanese Bento boxes and Deli foods and sweets to snack, and variety of side dishes are freshly made at store every morning. And we also carry fresh Vegetable, Frozen meats, fishes of Japanese kinds, household goods.
Deli section makes Japanese Prepared foods, Bento, Donburi(Serve over rice), Sushi, Rice ball, salad, Ramen, Udon, Soba noodle, curryrice and other Japanese cuisines.
