HAKKOAN is a new summer pop-up stand, open from July through August. Based in Brooklyn, the brand celebrates the beauty of Japanese fermentation culture through small-batch koji seasonings and hands-on workshops.

This summer, we’re introducing our amazake stand—a refreshing take on Japan’s traditional fermented rice drink. Rooted in centuries of culinary heritage and crafted with care, our amazake offers a naturally sweet, alcohol-free way to stay cool and nourished. Whether you’re curious about fermentation or simply seeking something new, our seasonal stand invites you to slow down and savor the gentle power of koji.

Hakkoan is a Brooklyn-based fermentation brand dedicated to sharing the beauty and benefits of Japanese koji culture with the local community. Rooted in tradition but driven by creativity, we develop and sell handcrafted seasonings made with麹( koji) and host fermentation workshops that bring the magic of 発酵( fermentationto) life.This summer, we’re popping up with our amazake stand—a refreshing way to introduce people to the gentle power and rich flavor of Japan’s beloved fermented rice drink.
